Rose hip soup and Almond Macaroons

Ingredients (4 cups)

Rose hip soup

1/4  cup Rose hip flour

1 tbsp Cassava flour

2.5 cup Water

2 tbsp Honey

Coconut sugar to taste

lemon juice from 1/2 Lemon

Combine rose hip flour and cassava flour into a saucepan and pour in the water. Allow to boil. Mix and add in honey, lemon and coconut sugar to taste.

Almond Macaroons (12 small biscuits) 

1/2 cup almonds

1 tbsp coconut sugar

1 egg white

Preheat oven, 200 °C. Process almonds to a fine flour. Add coconut sugar and egg white into the almond flour and mix until a creamy consistency. Add tsp size macaroons onto a parchment paper and bake for 8-10 min. Until golden.
