Rosehip Energy Bars

1/2 cup Rosehip flour

1/2 cup Pumpkin seeds

1/2 cup Buckwheat flakes

1/4 cup shredded Coconuts

1/4 cup finely chopped Figs

1/4 cup Goji berries

1/2 cup finely chopped Cashew nuts

Pinch of salt

1/4 cup Coconut oil

3 tbsp Honey

2 Eggwhites

Preheat oven, 175 C. Combine rosehip flour, pumpkin seeds, buckwheat flakes, shredded coconuts, finely chopped figs, goji berries, finely chopped cashew nuts and salt. Put aside. Melt coconut oil and honey. Stir well and let cool for 5 min. Add eggwhites and whisk. Pour the melted coconut mixture into the dry ingredients and mix well. It will become a sticky dough. Add into a silicon cake form (I used a 25 cm diameter round cake form) and bake for 20-30 min until golden
