Dill Salmon with Coconut Cream

Ingredients (4-5 portions) 

Fresh Salmon Fillet

A bundle of Dill

Lemon-pepper

1/2 can Coconut Cream

1/2 can Coconut Milk

Sweet potatoes

Preheat oven,225 C°. Put generous amount of dill in an ovenware. Add lemon-pepper, salt and pepper on the flesh side of a fresh salmon and put it on top of the dill layer (skin-side up) -Add coconut cream and coconut milk 1/1 ratio until it covers the dill and 1/2 of the salmon and cook for 15 min – peel of the skin and add more lemon-pepper, salt and pepper and cook for another 15-20 min. Serve with sweet potato mash (I just pressed the potatoes to keep it light)
