Ingredients (2 portions)
Salad
1 bag Rucola salad (∼ 100 g)
1 bag Spinach (∼ 100 g)
1/2 Red Onion
1 Avocado
1 Mango
1 package Bacon (∼ 200 g)
2 grilled Chicken fillets
1/2 Lemon
2 tbsp Olive oil
Pinch of Salt
Pepper
Combine rucola salad, spinach, onion, avocado, mango in a salad bowl. Cut grilled chicken fillets into smaller pieces and add into the salad bowl. Fry bacon and lay the cooked pieces on a paper to drain before you add into the salad. Sprinkle lemon juice, olive oil, salt and pepper.
Salsa
1 Mango
1-2 tsp Sambal oelek (depending on how spicy you want to have it)
1 tsp White wine vinegar
2 tbsp Olive oil
1 tbsp Honey
Lemon juice from 1/2 Lemon
Pinch of Salt
Pepper
Mix mango until fine chopped and add all other ingredients.
