Cauliflower rice with Walnuts and Basil Vinaigrette

1 Cauliflower

1/4 cup Walnuts

20 g Basil

1 tbsp white wine vinegar

3 tbsp olive oil

1 garlic clove

Lemon juice from 1 Lemon

Pinch of Salt


3 tbsp Water

1 Yellow Squash

Process 1 cauliflower and 1/4 cup walnuts in your blender until relatively finely shopped – In another bowl, add 20 g basil (I used frozen basil), 1 tbsp white wine vinegar, 3 tbsp olive oil, 3 tbsp water, 1 garlic glove, lemon juice from 1 lemon, salt and pepper and mix (I used my hand blender)- Add the mixed cauliflower mixture into the basil vinaigrette – Mix well and let stand. Fry yellow squash (or any other vegetable or meat you want to include. E.g bacon is great) and add the rice – fry for additional 5 minutes
