Walnut and Banana Scones with Mint-Date paste

Ingredients 

1/2 cup Walnut flour

1/2 cup Almond flour

3 tbsp Coconut flour

2 tbsp Honey

1 Egg

3 tbsp Ghee

3 tbsp Coconut milk

1/2 tsp Baking powder

Pinch of Salt

Lemon zest from 1/2 Lemon

Scones

Preheat oven,175 C°. Add 1/2 cup walnut flour and 1/2 cup almond flour (I processed almonds and walnuts until fine flour consistency in my blender), 3 tbsp coconut flour, 2 tbsp honey, 1 egg, 3 tbsp ghee, 3 tbsp coconut milk, 1/2 tsp baking powder, pinch of salt, lemon zest from 1/2 lemon. Mix well and add 1 banana (shopped into slices) and fold in carefully – add into silicon muffin-forms (3/4 full) – bake for 20 min.

Mind-Date paste

Make the date paste by adding 1 cup pitted dates, 1 tbsp fresh mint and 1/2 tsp vanilla powder – Process in your blender or with a hand mixer until smooth consistency
