Ingredients (10 muffins)
2 Bananas
8 fresh pitted Dates
1 cup Sweet Potato
1/2 cup Shredded Coconut
2 tbsp Honey
1/2 cup Hazelnut flour
1 grated Apple
1 tsp Cinnamon
1 tsp Vanilla powder
1/2 cup chopped Hazelnuts
Preheat oven,175 C°. Boil Sweet potato untill soft and mash until smooth. Mash 2 bananas and 1 cup fresh pitted dates to a creamy consistency – Add the remaining ingredients. Spoon into 10 muffin cups (2/3 full) and add chopped nuts of choice and/or chocolate nibs – Bake for 15-20 min – Let cool (I prefer to eat them cold).
