Crunchy Apple Pie with Banana Nice-Cream and Cashew-Coconut Cream

Crunchy Apple Pie

3 Apples

∼ 3 tbsp Cinnamon

∼ 2 tbsp Coconut sugar

1 cup Almond flour

1 cup Buckwheat flakes

2 tbsp Ghee

1 tbsp Honey

A handful Almonds

1 tbsp Coconut oil

Pinch of Salt

Preheat oven, 175 C°. Chop 3 apples and put in a coconut greased cake form – sprinkle some cinnamon and coconut sugar evenly on top – set aside – prepare the topping: 1 cup almond flour, 1 cup buckwheat flakes, 2 tbsp ghee and 1 tbsp honey – mix to a creamy dough and “sprinkle” evenly on top of the apples – Bake for 20 min. Meanwhile prepare candied almonds by adding 1 tbsp coconut oil into a heated frying pan and add a handful almonds – fry for about 3-5 min (make sure they don’t burn) – finally add a pinch of sea salt – chop the almonds and put on top of the apple pie

Banana Nice-cream

3 frozen Bananas

1 tsp Vanilla powder

1 tbsp Coconut cream

Mix 3 frozen bananas, 1 tsp vanilla powder and 1 tbsp coconut cream

Cashew-Coconut Cream

1 cup Cashew nuts

1/2 cup Water

1/2 cup Coconut milk

1 tsp Vanilla powder

4 pitted Dates

Mix 1 cup cashew nuts, 1/2 cup water, 1/2 cup coconut milk, 1 tsp vanilla powder and 4 pitted dates into a creamy texture in your blender
