Apple and Carrot breakfast rolls

Ingredients (8 small rolls)

4 eggs

1/2 cup Grated apple (∼1 big apple)

1/2 cup Grated carrot (∼2 carrots)

1/2 cup Almond meal

3 tbsp Cassava flour

2 tbsp Coconut flour

2 tbsp Sunflower seed

2 tbsp Pumpkin seed

Pinch of  salt

1,5 tsp baking soda

Chia Seeds to sprinkle on top

Preheat oven, 200 C°. Whisk eggs until fluffy and add grated apple and carrot. Mix all dry ingredients and add to the apple/carrot mixture. Let swell for 5 minutes. Shape into 8 rolls (depending on your size preference of the rolls it might be more or less) and add on a baking sheet. Sprinkle some Chia seeds on top. Bake for 15 min, until golden.
