My favorite meal of the day is definitely breakfast. Especially on the weekends when you have more time to prepare. Unfortunately the weekend is only 2 days out of 7… I realized I needed more options for the weekdays. Usually I eat a breakfast bowl with coconut yoghurt (or fruit and vegetable smoothie) with paleo granola and fruits but I was looking for variation as well as something extra to make the breakfast more filling. These breakfast rolls are just perfect. I love that I can keep them in the fridge which makes it really easy during busy weekdays.
